Homemade vanilla syrup for the cold brew coffee that I’m also making right now. This is will probably last us all summer, and is the best vanilla syrup you will ever taste! I mean really, just look at that rich caramel color!

Coconut Raspberry Smoothie Parfait

vegan adaption from abeautifulmess

Ingredients

  • 1/4 cup shredded coconut, plus more for garnish
  • 1/2 cup coconut milk yogurt
  • 3/4 cup coconut water
  • 1 cup frozen raspberries
  • 1/2 banana

Directions

  1. For the coconut layer, blend the shredded coconut, coconut water, and half of the coconut milk yogurt (1/4 cup).
  2. Add to a glass or jar and rinse your blender.
  3. For the raspberry layer, blend the raspberries, banana, and the other half (1/4 cup) of the coconut milk yogurt.
  4. Pour this over the coconut layer and garnish with more shredded coconut. Serve immediately.

Healthier Chocolate Blueberry Smoothie (Vegan Friendly)

Serves 1

What You’ll Need:

1 cup frozen blueberries
2 teaspoons cocoa powder
1 cup milk (of your choice)
1/4 teaspoon vanilla extract
1 dash ground cinnamon
1 dash ground nutmeg
2 teaspoons maple syrup (or agave)

What to Do:

  1. Blend all ingredients together until smooth.  If desired, strain through a fine-mesh strainer into a glass for a smoother texture.
  2. Garnish with a few whole blueberries, and serve immediately.
